Philippe Delmee was a maths teacher who made the move to winemaking in 2006. He now has about 6ha of land across many small parcels around Anjou, all farmed organically. The soil is mostly schist, and the vines are Chenin Blanc, Cabernet Franc, Grolleau and a little Pineaud'Aunis. Sulphur is only added in the pied de cuve for each wine and he does not fine or filter.
This Grolleau was made with whole bunch maceration for 8 1/2 weeks, (hence the name of the wine) and with no punching or pressing to keep the extraction of tannins to a minimum. A light & fruity wine that is great served slightly chilled.
