This is a small, soft goat's cheese with an ash based natural rind. It is bright & juicy with a light, silky texture and notes of hazelnut & citrus.
Fraser Norton and Rachel Yarrow make their cheeses on a farm run by an environmental charity that offer tenancies on their land to agricultural business start-ups who are locked out by high land prices. Fraser and Rachel now use raw milk exclusively from their own herd of purebred Anglo Nubian goats, a breed beloved of cheesemakers for the high fat content of its milk.
