Cider maker Martin Harris adheres to a strict natural production routine. He only uses wild yeast and does not carbonate or use additives - not even sulphites. He continues a long line of Herefordshire cider and perry production in his 300-year old cider mill. He is certified organic too.
The Coppy pear variety is very rare and Martin only has a few trees. By blending with Blakeney Red he was able to produce a perry using the Coppy pears for the first time.
