Ramón Saavedra is an ex Michelin star chef who left his job to work the vineyard he inherited in Granada. The extremes in temperature between hot days and cool nights in this area mean that there is a perfect balance of sweetness and acidity. For this wine grapes are harvested relatively early to retain a high level of acidity, Ramón’s idea was to make a rosé that is bright and zippy with a little structure. Grapes are destemmed and macerated for around 6 hours before being pressed off and passed to stainless steel to age for around 5 months. Bottled with no additions.
