Carolin and Nikolaus make wine in Fitou, Languedoc - Roussillon. Their eight hectares of vines grow from limestone-rich soil, surrounded by olive, almond and fig trees, as well as garrigue vegetation, most commonly thyme and rosemary, that thrives on the limestone slopes of the Mediterranean coast (the domain is only five kilometres from the sea). This rejection of monoculture brings with it wild flora and fauna that keeps the soil alive and healthy.
This wine is a fresh and very drinkable light-bodied red. The process here is unique - First, Syrah is pressed like a rosé, then Cinsault grapes are tossed (whole cluster) into the fermenting juice for 4 - 5 days, without extraction. The wine is then pressed, and kept in stainless steel.
