This is Little Pomonas take on a Col Fondo, a term used in traditional prosecco making, where a second fermentation takes place in the bottle and the drink is left undiscorged for a cloudy style. 100% Egremont Russet apples were used for this.


Although James & Susanna typically ferment naturally, on a rare occation some added yeast is needed, as was the case here.
