From a long line of winemakers in Rias Baixas, Constantina Sotelo makes honest & pure wines from old Albariño vines - most of which are ungrafted - trained in the traditional local method on pergolas. All her wines are naturally fermented without any additions.

Although Constantina’s bodega is in the heart of Rias Baixas she chooses to work outside of the DO due to their restrictive and conservative rules.

Constantina works with extended lees aging in her wines, sometimes hand stirring fermenting wine 3 times a day to incorprporate rich and distinctive flavours that place her wines outside of the norm of the region. Unfortunately due to this experimental nature she received the vitriol of the local winemaking community - nicknaming her 'the witch' - a name she stole and has now incorporated into the labels of her wines.

Octopus is from a small family plot of Albarino vines approx. 1km from the sea. The grapes are fermented on the skins and stirred (batonnage) 3 times a day. the resulting must (juice) is then aged in amphora with further lees stirring for 8 months until bottling. There are only 533 bottles made in total!
