Helene and Dick Willems moved from their native Holland in the 70s and started making Gouda-style cheese in the mountains of Coolea in County Cork, Ireland. They use milk from a local herd of Holstein-Friesian cows to make the cheese on their small family farm. Aged for up to 2 years for fully developed sweet butterscotch & umami flavours.
