Joan Cross makes this cheese in tiny batches in County Durham. The style is something like what you would have found on a farm in England 150 years ago, when cheeses like this were made in farmers kitchens. The texture is springy yet crumbly. The taste is milky and a little tangy, with yoghurty & earthy notes, but batches vary slightly in flavour.
