Rémi Sédès leases just 4.5 ha of land in Coteaux d’Ancenis, near Nantes in the Loire. He is a Gamay specialist, but recently also works with some Melon de Borgougne & Chardonnay. Part of winemaking for Remi is a lifestyle choice . He wants to work outside and not with machines - he uses his shire horses to work the land.
The grapes for Noe are from the lower part of the plot where the soil is deeper and the vines have more vigour. The vines here have been organic for 25 years, so the vines & the yeasts are healthy, and fermentation is short. The skins are on for the entirety of it - about 20 days. This wine is juicy & mineral, with some structure too.
