Cyril initially was considering a career in winemaking before returning to his native Normandy to learn cidermaking from local legend, François David.  Now considered a cidermaking icon in his own right, Cyril produces some of the most vibrant and distinctive drinks from the region.

Zangs’ orchards are centred around the village of Glos in Normandy and are influenced by their proximity to the Channel.  They are planted with a mix of 69 varieties of apple tree, grown without chemical treatments, all between about 15 and 60 years old.  Rigorous selection of fruit in the orchard is followed by 6 weeks 'aging' and a careful cleaning of fruit before pressing.

This Side(R) Up is a single orchard blend from Cyril's closest orchard to the coast and is driven by an underlying salinity.  Produced in a manner that increasingly is called 'rural method' in the UK cider scene.  The fermenting juice is racked several times in winter to reserve sweetness and capture the natural carbonation in the bottle.  Cyril riddles and disgorges his bottles by hand.
