Working 7 micro parcels totalling just under 3 hectares scattered across the hills of the Hautes-Côtes de Beaune, with Beaune's signature limestone as the bedrock beneath each, Morgane and Christian are part of the young new face of Burgundy and to say they make truly 'handmade' wine would not be doing it justice.
There is no mechanisation in the vineyards, only horses used or, when the vineyards are too steep, they are only worked by hand. They choose to spray raw milk on the vines instead of sulfur and no pumping or filtration is used. Grapes are pressed in an old, wood-beam, vertical screw press, and aged in neutral oak under their house.
The paper used for their labels comes from an old-fashioned paper mill of Fontaine de Vaucluse from the Moulin Vallis Clausa. It is composed of cotton, linen, hemp and inserted flowers. Morgane cuts out her labels, stamps the drawing of a bird drawn by her and then manually graphs the name. All bottle labels are applied by hand.
Corail is a new cuvee for Dandelion. Maybe a one-off as it was a product of necessity - to make harvest easier due to the impending arrival of Morgane and Christians firstborn. As Morgane explains "“We decided at harvest with yields being so low, to add all the fruit from the Goutte d'Or vineyard, all our old vines, whole bunch in one tank. We left it fermenting for a week with no pigeage, just a little bit of fresh juice poured over the top occasionally. Then we pressed it, and it aged for a year in barrel. It's a super light red, and probably a one-off!”
We only have a tiny allocation of this wine!
