This is a semi-soft washed rind cheese with milky, mushroomy & nutty flavours and a savoury, pink rind. The texture is smooth & bouncy and the rind has a pleasant bite.
The cheese is made by the Ferguson family on a coastal farm in West Cork, Ireland, where the family also keep pigs and grow vegetables & herbs in their chemical free (& mostly biodynamically farmed) market garden. Microbacterium Gubbeenense - a white velvet bloom organism native to the pastures of Gubbeen Farm - influences the taste and is encouraged by regularly washing the cheese in brine and a splash of white wine.
