The Innes cheeses are made in Staffordshire at Highfields Farm, using a slow & careful process with raw milk from their mixed herd of goats. Shunning commercial starter cultures is very unusual in cheese making today, but these guys only use their own whey to kick start the process.
The Innes Log has a smooth & dense texture. It's clean & bright with grassy notes, developing rich, nutty flavours as it matures.
