Former Parisian journalist David Foubert relocated to Saumur for a new chapter, pursuing winemaking studies. Influenced by Aymeric Hillaire and Melanie Hunin of Domaine Mélaric, who taught him and hosted his first vintage in 2014, David restored his own abandoned cellar in time for the 2015 vintage, carved into the area's characteristic Tuffeau (chalk).

 

With power installed post-2016 harvest, he now leases parcels from retired vigneron Philippe Gourdon, who still assists in the biodynamic vineyards.Local Tuffeau limestone defines both the wines and architecture, with vineyards featuring clay topsoil over Tuffeau bedrock.

 

Shielded by the Mauges hills, Saumur experiences a continental climate, with Le-Puy receiving less than 200mm of rainfall annually, elongating the growing season for optimal ripeness.

 

The name "Folle Berthe" is a play on David's surname, translating to "Crazy Bear."

 

David Foubert previously made this pet-nat from his crop of Chenin Blanc, but with yields lower in 2020 year he decided to save the Chenin for his still cuvees and instead he pressed his Pineau D'Aunis directly, extracting as little colour as possible.  He liked the results so much he has continued to follow this recipe.  Expertly executed pet-nat!

    Unfortunately from time to time wines or ciders may arrive out of condition, usually due to defective closures or any number of possible naturally occurring faults. If you find a bottle where you believe this is the case please contact us immediately.

    You may wish to cancel your order for whatever reason after it arrives. In which case you may do so within 7 working days from receiving the order, provided the bottles are unopened, intact and in their original packaging (which must still be in its original condition). Once the goods are collected and inspected, we will reimburse you for the cost of the product minus a surcharge for collection. If you fail to make the goods available for collection within 14 days of cancellation, you will be deemed to have accepted the goods.
