She started making chocolate after discovering that cacao, just like wine or coffee, can display a vast range of flavours depending on varietal & origin when correctly roasted. She makes her chocolate from scratch and makes sure its sustainable - She pays a fair price for organic beans and every ingredient is fully traceable.
The chocolate is sweetened with unrefined coconut sugar and Lacuma - a fruit from Peru, noted for its caramel taste and nutritional benefits.
