Daniel and Nicola Ham work from their cellar in Wiltshire, sourcing the best grapes they can find from mostly local vineyards & making pure & exciting wines completely free of additives.
For 369 Pinot Meunier (45%) was sourced from two vineyards over two vintages, one in Crouch Valley, Essex (the Field Notes vineyard) and another in Dorchester. A 3 week carbonic maceration for everything, with the 2021 aged in stainless steels and the 2020 aged in neutral Burgundy barrel (16%).
The Pinot Noir (41%) from 2021 was grown at Ham Street vineyard in Kent, most saw a five-day whole bunch maceration before pressed to Burgundy barrels to complete fermentation and ageing. The remainder was hand de-stemmed and fermented as a semi-carbonic maceration for two months in fibreglass before heading to barrel.
The Triomphe (14%) was from the nearly-wild Wild Juice Chase vineyard in the Test Valley, Hampshire, from the 2021 vintage. Everything underwent a three week semi-carbonic maceration before being pressed to barrel to continue fermentation and ageing.
The assemblage was blended and bottled via gravity this summer in accordance with the lunar calendar, with no fining, no filtration and no additions.

Unfortunately from time to time wines or ciders may arrive out of condition, usually due to defective closures or any number of possible naturally occurring faults. If you find a bottle where you believe this is the case please contact us immediately.
You may wish to cancel your order for whatever reason after it arrives. In which case you may do so within 7 working days from receiving the order, provided the bottles are unopened, intact and in their original packaging (which must still be in its original condition). Once the goods are collected and inspected, we will reimburse you for the cost of the product minus a surcharge for collection. If you fail to make the goods available for collection within 14 days of cancellation, you will be deemed to have accepted the goods.
