This is a completely natural sparkling wine by Will Davenport - nothing added whatsoever, not even sulphites. It is clean & refreshing with a light sparkle. Made in a Pet Nat style, disgorged but with light sediment in the bottle.
About the 2020 vintage Will says: “The Auxerrois is from our Sussex vineyard, all the rest is from Kent. The main difference this year is the inclusion of Bacchus. I felt that Bacchus would work well with the aromatics (wouldn’t do 100% Bacchus though). It has worked really well with loads of fresh fruit and I expect the yeasty side of the flavour will develop over a month or two as we’ve seen in previous years. We tried to disgorge the wine a bit cleaner this year, so less sediment in the bottle. I really like the way the wine develops and I think a large part of this is down to the yeast sediment, so we wanted to keep a bit post-disgorging.”
In 1991 Will Davenport planted 5 acres of vines at Horsmonden in Kent. He now farms 24 acres of organic land across 5 parcels in Kent & East Sussex. The winery is at Limney Farm, an old dairy farm which is now completely solar powered. The focus is on caring for the soil in the vineyard, producing healthy grapes and protecting the surrounding wildlife & woodland. In the winery Will prefers a careful, natural approach - wild yeast fermentation, no filtering and no fining agents used.
