This cheese is made by Charlie Westhead at Neals Yard Creamery in Herefordshire. It is made slowly by hand and mould ripened for 2-4 weeks to develop in flavour. The taste is bright & lemony, the texture is dense but it softens as it ages with lovely creamy breakdown under the rind.
At Neals Yard Creamery the focus on sustainability means windmills and solar panels now generate most of the energy and drain water is being purified through a wetland system of willows and reeds.
