1 of only 5000 bottles, The Serra Mãe is made from 100% Castelão, grown on the free-draining, sandy soils West of Palmela. It was naturally fermented (no added yeast), and then subsequently aged, in concrete vats. The wine shows cherry, elderberry and bramble fruits, some green herbs, and a fresh and juicy texture. Its fresh acidity is a perfect match for slow-roast lamb or sausage dishes.
