1 of only 500 bottles, The Serra Mãe is made from 100% Castelão, grown on the free-draining, sandy soils West of Palmela. It was naturally fermented (no added yeast), and then subsequently aged, in concrete vats. The wine shows cherry and bramble fruits, some green herbs, and a fresh and juicy texture. Its fresh acidity is a perfect match for slow-roast lamb or toad in the hole.
