This is a traditionally made Chinuri from Chardhaki in Central Georgia. The wine is fermented in terracotta qvevri -some of which are 250 years old - buried in the floor of the cellar. The juice & skins and all are poured directly into the quevri for fermentation, and after a few weeks the skins will naturally fall to the bottom. After 6 months the juice is then pumped into a clean qvevri for ageing, leaving the skins behind. Bottled without filtration, fining or added sulphur.
