This is the sister cheese of St Jude, made by Julie Cheyney at Fen farm in Suffolk. She uses the raw milk in the morning, still warm from the milking, which helps create the most luxurious texture & taste. The young St Jude cheese is spayed with brine and matured to achieve a deeper flavour - the St Cera is stronger, more complex with a fruity flavour and an oozy, melting texture. So delicious!
