Art of Darkness is Little Pomonas yearly experiment with extended barrel maturation, expressing the Ellis Bitter apple, a variety that needs time to fully show its potential. This is spontaneously fermented in tank and then aged in barrels for 16 months before bottling, still and dry, without any additions or filtration. 2018 was a brilliant year for apples; this cider will be great now but benefits from ageing. It is aromatic & mineral with bold tannins. This goes very well with food especially salty blue cheese or rich, earthy dishes.
