Andi Weigand is one of the new generation winemakers in Franconia who do things differently, shunning additives, picking by hand, revisiting traditional techniques and cutting no corners. His approach mixes tradition with progress. He uses an 80-year-old basket press and vinifies in large German oak. He also experiments with maceration in qvevri.
For the White cuvee grapes are pressed into old large barrels (1250 l) and fermented spontaneously, then left for 10 more months on lees in barrel. The wine is bottled unfined, unfiltered, and with zero addition of sulfur.
