THE WINE
This 100% Chardonnay comes from a 1.3-hectare vineyard in Lignorelles, in the northern part of Chablis, rooted in clay soils from the Upper Jurassic period. The 25-year-old organically farmed vines are gently pressed using a pneumatic press, and the must is transferred by gravity. After a static 24-hour settling, the wine is racked, keeping only the finest lees. Fermentation takes around two weeks, with malolactic fermentation beginning naturally in tank. The wine is aged for 18 months, lending it remarkable stability—meaning no fining, filtration, or stabilisation is needed before bottling.
The 2022 vintage in Chablis is regarded as one of the finest of the past decade. Despite the warm and dry conditions, healthy fruit, a cooler period leading up to the harvest, and moderate yields preserved the acidity, resulting in a well-balanced wine. Following the challenges of 2021, with its frosts and rains, this vintage was a welcome relief, allowing producers to fully express their terroir and winemaking expertise.
THE PEOPLE
Founded in 1982 by Alain Mathias, the Domaine is now led by his son Bastien and his wife Carole, who took over in 2015. Alain was ahead of his time, embracing organic and sustainable practices in both vineyard and cellar—located in an old quarry in Epineuil—at a time when mechanical methods were becoming the norm in a region eager to capitalize on its growing fame.
Carole and Bastien continue his legacy while introducing their own innovations to keep the Domaine moving forward. They focus on preserving purity and freshness in the face of a warming climate by incorporating larger oak vessels, ceramic jars, amphorae, and new stainless steel tanks into their aging process. Their vineyards are situated in Villy and Lignorelles, where the soils are a mix of Portlandian and Jurassic, as well as in the steep 1er Cru Vau de Vey, planted on Kimmeridgian limestone.
THE PLACE
Petit Chablis is the most accessible and youthful expression within the Chablis AOC hierarchy, located in northern Burgundy. Grown on higher elevation sites and younger, Portlandian limestone soils—distinct from the more complex Kimmeridgian found in classic Chablis—Petit Chablis offers a lighter, zesty style of Chardonnay. These wines are known for their fresh citrus character, bright acidity, and clean minerality, often enjoyed young for their crisp, uncomplicated charm. Though "petit" in name, the appellation showcases the unique terroir-driven purity that defines the Chablis region.

In the unlikely event that your product is damaged on arrival or if the wrong product has been delivered to you, please contact us and we will arrange for collection and exchange or reimbursement. We will reimburse you within 14 days from the date you notify us, once the items have been collected, returned to us and inspected.
Unfortunately from time to time wines or ciders may arrive out of condition, usually due to defective closures or any number of possible naturally occurring faults. If you find a bottle where you believe this is the case please contact us immediately.
You may wish to cancel your order for whatever reason after it arrives. In which case you may do so within 7 working days from receiving the order, provided the bottles are unopened, intact and in their original packaging (which must still be in its original condition). Once the goods are collected and inspected, we will reimburse you for the cost of the product minus a surcharge for collection. If you fail to make the goods available for collection within 14 days of cancellation, you will be deemed to have accepted the goods.
