Costa D’Or, also known as Costador, cultivates approximately 15 plots scattered across the Tarragona province, primarily concentrated in Conca de Barberà, where both mountainous and Mediterranean influences converge. The predominantly calcareous soil imparts a distinct minerality to their wines. Costa D’Or practices organic farming, employing minimal intervention techniques such as pheromones to deter pests, occasional use of copper and sulfur, and sometimes sodium bicarbonate to prevent powdery mildew.

Joan, the winemaker, strives to achieve optimal grape maturity, resulting in wines characterized by a balanced ripeness and roundness, complemented by the natural acidity imparted by the clay calcareous soils at altitude. He meticulously times the harvest to avoid excessive alcohol levels, waiting until the grapes reach peak ripeness. This year, due to abundant September rains slowing down maturation, harvest took place in the first week of October.

Post-harvest, the grapes undergo a 2-3 month maceration period, with 30% left as whole bunches and the remainder destemmed. Subsequently, the wine is transferred to small amphorae (300 and 600 liters) for approximately 6 months of further aging before bottling.

The logic behind the ceramic Metamorphika bottles  is that this wine spends its entire life in clay, from the soils, to the vinification and ageing to its bottling.  Maybe enjoy a glass from a ceramic cup instead of your usual wine glass to complete the journey?
