In 1991 Will Davenport planted 5 acres of vines at Horsmonden in Kent. He now farms 24 acres of organic land across 5 parcels in Kent & East Sussex. The winery is at Limney Farm, an old dairy farm which is now completely solar powered. The focus is on caring for the soil in the vineyard, producing healthy grapes and protecting the surrounding wildlife & woodland. In the winery Will prefers a careful, natural approach - wild yeast fermentation, no filtering and no fining agents used.
This blend of 5 grape varieties is crisp & floral with notes of stone fruit. 10% of the blend was fermented in large oak foudres, giving the wine a subtle creamy texture, too.
