THE WINE
Pinot de Zinc 2022 was born from Christian’s chance to swap fruit with a friend farming biodynamically near Pouligny—an opportunity he couldn’t refuse. In this warm, dry vintage, the wine shows more concentration and depth than the 2022 Dandelions, blending equal parts Pouligny fruit and the “Dessus de Lies,” a small, long-aged parcel from the Dandelion cuvée. Each component spent two years in barrel before six months together in tank, and both were bottled without additions, unfined and unfiltered, with all cellar work done by gravity. The result is a deeper, more structured expression from Dandelion that pairs beautifully with food.
THE PEOPLE
Working 7 micro parcels totalling just under 3 hectares scattered across the hills of the Hautes-Côtes de Beaune, with Beaune's signature limestone as the bedrock beneath each, Morgane and Christian are part of the young new face of Burgundy and to say they make truly 'handmade' wine would not be doing it justice.
There is no mechanisation in the vineyards, only horses used or, when the vineyards are too steep, they are only worked by hand. They choose to spray raw milk on the vines instead of sulfur and no pumping or filtration is used. Grapes are pressed in an old, wood-beam, vertical screw press, and aged in neutral oak under their house.
The paper used for their labels comes from an old-fashioned paper mill of Fontaine de Vaucluse from the Moulin Vallis Clausa. It is composed of cotton, linen, hemp and inserted flowers. Morgane cuts out her labels, stamps the drawing of a bird drawn by her and then manually graphs the name. All bottle labels are applied by hand.
THE PLACE
Wines from Pouligny—nestled just below the famed slopes of Puligny-Montrachet—tend to show a distinctive combination of purity, freshness, and quiet depth. The cooler, breezy position and often limestone-rich soils give the fruit a lifted, mineral edge, while careful farming (as in the biodynamic vineyards Christian works with) brings clarity and energy to the wines. Pouligny fruit often delivers a subtle but confident structure, gentle aromatics, and an elegant, food-friendly balance.
Hautes‑Côtes de Beaune, perched on the high plateaus above the Côte de Beaune, is emerging as one of Burgundy’s most exciting up-and-coming regions. Its higher altitude and cooler climate produce slower-ripening grapes with bright acidity, elegant aromatics, and subtle minerality, giving both reds and whites a fresh, refined, and food-friendly profile. Historically overlooked, the region is now attracting serious investment from established and younger growers, with climate shifts enhancing its ability to preserve freshness in a warming world. Critics highlight Hautes‑Côtes wines for their finesse, approachability, and excellent value, making the region a compelling alternative to pricier Côte de Beaune villages and premier crus.
