THE WINE

The 4th iteration of Hugo's field blend methode traditionelle.  This is as close to a grower-maker champange experience you can get from a UK producer and consistently one of our favourite wines on the shelf.

THE PEOPLE

A chance encounter between Hugo Stewart & Daniel Ham in 2018 was the spark for Domaine Hugo, the second collaboration of Hugo’s twenty year journey into wine following his time with Paul Old creating the pioneering biodynamic winery, Les Clos Perdu in the Languedoc.  Having moved back to the UK to his family farm in Wiltshire Hugo immediately started the conversion of the land over to biodynamic vineyards from its previous incarnation as a conventional pig farm.  The chalky soils of the land led hugo to focus in on the classic champagne varietals and methid traditionelle production.

Dan heads up the winemaking, with Hugo concentrating on the biodynamic viticulture. A shining example of how the future of wine should look in the UK: Hugo's attention to detail in the vineyards and Daniel's commitment to terroir driven wines are a powerful combination.

THE PLACE

Just south of Salisbury, botley Farm sits on south facing slopes overlooking the rolling hills of Wiltshire.  In contrast to the destructive conventional farming of the region, Hugo utilises biodynamic practises and nature-friendly land management like leaving high hedgerows and wildflower meadows, to actively heal and increase biodiversity in his farm.  The thin chalk soils are a perfect replicant of champagne, and lend themselves to the classic Pinots and Chardonnays that Hugo has planted here.
