Dorstone is made to a traditional recipe where the curd is set very slowly overnight then gently ladled by hand to drain. After draining it is gently rolled in ash and matured to form a wrinkly geotrichum rind. The cheese has a fluffy texture and a light, bright & citrusy flavour.
