THE CIDER

The bedrock of Find & Foster's production.   Made from predominantly eating and cooking apples to give the acidity and freshness you really need to treat it just like a champagne as it has already had that treatment in the cellar, spending 2 years on the fine lees before disgorging.  

 

A really special cider that we often refer to as the "gateway drug" - a way of bringing people into cider that think they don't like it.  In Polly's words this is "a delicate harmonious champagne-like cider with honeyed notes". We think it is utterly delicious!

 

 

THE PEOPLE

Polly Hilton and husband, Matt, set up Find & Foster to revive neglected traditional apple orchards in Devon, helping preserve wildlife & biodiversity, and to protect old local apple varieties from extinction. Their ciders are a true expression of these unique varietals and the terroir in these orchards.

 

THE PLACE

The heritage orchards of the Exe Valley in Devon are a vital part of the region’s rural landscape and agricultural history. Nestled among rolling hills and riverbanks, these traditional orchards are home to a wide variety of old English apple cultivars, many of which are unique to the West Country and often undocumented and unnamed. When managed organically or with low intervention, the orchards support local biodiversity, providing habitat for pollinators, birds, and wildlife. As well as preserving genetic diversity, the fruit from these trees is increasingly used for high-quality, small-batch cider and perry, reflecting a deep connection to place and tradition.
