THE WINE
This Pinot Meunier–driven blend (78% Meunier, 19% Pinot Noir, 3% Chardonnay) from 2014 (17% )and 2015 (83%) is a zero-dosage Champagne with precision, structure, and depth. From 45-year-old vines grown on flint, silex, and clay rich limestone soils. Grapes are hand-harvested, gently pressed, and fermented in enameled vats using only indigenous yeasts. Aged on their lees for seven years and bottled unfined and unfiltered, the wine delivers pure, authentic expression.
Designed as a “sommelier’s Champagne,” it’s versatile enough to please a group with diverse tastes while showcasing the expressive potential of Meunier. Rich yet refreshing, it balances power and elegance, offering impressive length and a mineral finish.
THE PEOPLE
Franck Pascal has a background in engineering and was trained in the army on chemical warfare and its effects on humans. When he took over the family vineyard he was shocked to see similarities in the chemicals commonly used in vineyards and how they destroy the health of the vines. He decided to get rid of them altogether and now works biodynamically - being amongst the first wave of growers in Champagne to make the transition.
Pascal is passionate about the connection between healthy soil, strong, healthy vines & high quality wine. Franck’s ethos goes beyond organic and biodynamic – employing naturopathic and energy healing methods at every step of the process. He believes it is essential to manage the energy levels in all living things – from soils to vines to worms – and that is the only path to growing vines that can showcase their full potential in fresh, pure wines. His champagne is vibrant, fresh & complex.
THE PLACE
Wines from the Vallée de la Marne, a key sub-region of Champagne, are renowned for their Pinot Meunier character. The region’s cooler, clay-rich soils and rolling river valleys produce grapes with vibrant fruit, supple texture, and early approachability. Vallée de la Marne Champagnes are often rounder and fruit-driven compared to the chalkier elegance of Montagne de Reims, making them versatile and expressive wines that pair beautifully with a range of foods while offering depth, freshness, and approachable complexity.
