THE WINE
From the same block and picking as the Vinho Branco this pet nat is wonderfully saline with a pleasing green twang at the end that makes this a fizz thats perfect for salty food.
THE PEOPLE
Elise started working in wine in 1996, learning from established Portugese winemakers like Anselmo Mendes, Carlos Lucas, Carlos Rodrigues and Alvaro Castro. In 2010 she returned to her family vineyards, immediately transitioning them to organic practises and introducing local sheep for a sidelong cheesemaking project (look at the corks in the bottle).
Working exclusively with traditional Portuguese grape varieties from Dão, Elise believes strongly that wines only show terroir through the use of these heritage grapes and natural fermentation.
THE PLACE
Dão is the oldest DOC Portuguese wine region dedicated to non-fortified wines set in central Portugal, known for its balanced and aromatic red and white wines made from indigenous grapes like Touriga Nacional and Encruzado. The region's mountainous, granite-influenced terrain and temperate climate contribute to elegant, age-worthy wines with higher acidity and distinct minerality.
