Caerphilly cheese is a mould-ripened cow’s milk cheese aged for about three to four months. The style takes its name from a small town in the South of Wales. Former cheese monger Todd Trethowan makes this near Weston-Super-Mare in Somerset, having moved over from Wales in 2014.
We absolutely love this cheese - fresh & tangy in the middle but with more mushroomy, earthy flavours on the rind. An underrated cheese in our opinion!
