THE PEOPLE
Toni Carbó first gained recognition through his collaboration with his friend Ramón Jané under the Mas Candí label, where they made a name for crafting low-intervention Penedès wines. Both came from families with a long history of selling grapes to Cava producers, but they broke away to vinify their own wines. In 2012, Toni and his wife Anna took this vision a step further by launching their own project, La Salada.
La Salada pays tribute to Toni’s great-grandfather, who acquired the vineyard plots from a wealthy landowner in a bid to lift his family out of a near-feudal existence. These were the poorest, least fertile plots, yet they became the foundation of La Salada’s legacy. Farmed organically and untouched by chemicals for generations, most of the vines are now over 80 years old, yielding wines that are deeply rooted in history and terroir.
THE PLACE
Penedès, in Catalonia, is one of Spain’s most important wine regions and the historic heart of Cava production. Indigenous grapes like Xarel·lo, Macabeo, and Parellada form the backbone of this sparkling wine, while the region’s varied soils and altitudes also support fresh still whites and robust reds. Increasingly, producers work with organic and biodynamic practices, aiming for minimal intervention to highlight purity and terroir. This combination of tradition in Cava and diversity in still wines makes Penedès central to Catalonia’s wine identity.
