THE PEOPLE
Les Enfants Sauvages  ("the wild children") is the small natural-wine domaine of Carolin and Nikolaus Bantlin, a German couple who came to Fitou, near the Spanish border in the Roussillon, more or less by accident and never planned on becoming winemakers at all. They bought an old estate with around 7.5 hectares of vines in 2002; after selling their grapes to the local co-op for a couple of vintages, Carolin trained in oenology and interned with fellow natural winemaker Olivier Pithon, who encouraged them to bottle their own wine instead. The name itself is a nod to The Doors' "Wild Child," reflecting the couple's hands-off, nature-led philosophy: no synthetic chemicals, only home-made nettle, chamomile, and horsetail preparations, vines trained in the traditional low goblet style on clay-and-limestone soils, and grapes dry-farmed and picked entirely by hand. It remains a genuine family operation with their sons Juri and Falk having grown up alongside the vineyard.

THE PLACE

Fitou is the oldest red-wine appellation in the Languedoc, granted AOC status in 1948 and split, unusually, into two separate enclaves some thirty kilometres apart within the larger Corbières zone: a rugged inland "montagne" area around Tuchan and a flatter, coastal "maritime" stretch near the Étang de Leucate. Its signature grape is Carignan, which must make up at least 40% of any blend, joined by Grenache, together the two typically account for 60% of a wine,  with Syrah favoured in the cooler hills and Mourvèdre nearer the sea. The result is characteristically full-bodied, sun-baked reds with notes of dark fruit, garrigue, and spice. Because Fitou's vineyards sit within the broader Roussillon wine zone, growers here are also entitled to plant Muscat and Grenache Blanc/Gris to make the sweet, fortified Muscat de Rivesaltes, an AOP created in 1956 as a spin-off of the older Rivesaltes designation.

Muscat de Rivesaltes is a vin doux naturel governed by an official INAO specification (cahier des charges). The grapes must reach a minimum natural sugar richness of 252 g/L before fermentation, reflecting the region's hot, dry, sun-drenched terroir. During fermentation, winemakers arrest the process through mutage;  fortifying the fermenting must with neutral wine-based spirit at 96% strength, added at between 5% and 10% of the must's volume. This halts fermentation while the wine still holds a good deal of the grape's natural sugar. The finished wine must reach a minimum acquired alcohol strength of 15%, a combined (acquired plus potential) strength of at least 21.5%, and retain at least 100 g/L of residual sugar, rules that together define the wine's characteristically sweet, aromatic style, built from Muscat à Petits Grains and Muscat d'Alexandrie grapes grown across the appellation's 89 communes in the Pyrénées-Orientales and 9 in the Aude.
