Father and daughter team, Billy and Kiki Hughes organically dry-farm (no irrigation (rare here!!)) their small (by South African standards) vineyard collection near their winery on the outskirts of Malmsbury,  in the heart of Swartland, north of the Cape.  Dedciated to encouraging rather than killing natural biodiversity in their vineyards, you'll see rare examples of cover crops and wildlife hosted in their vines adjoining the (unfortunately) more common sight of sprayed monocultural plots farmed by their neighbours.

Amarillo is a skin-contact blend of 60% Roussanne and 40% Grenache Blanc.  Each varietal is harvested and fermented separately.  For this experimental wine, Kiki took the pressed grape skins from another cuvee and left them to ferment before applying a second pressing. (There was enough juice left in the graoes to complete this as the initial pressing was in a very gentle basket press).  This gives the wine a very intensely coloured hue and deep tannic structure.
