A really great example of experimentation within the UK wine scene!
Quatro Mustachios started as a collaborative international project between Dave Haynes, Sam Bunker (of Titch Hill), Teo Vitsas & Matthias Altmann. Inspired by Dave's love of PIWI varietals (disease resistant hybrids) they concentrated on experimenting with these oft-unknown grapes - winning a sliver award in 2020 at the Interntional PIWI Wine Award for their Austrian blend made in Matthias's cellar. Sam and DAve continued on next year in Ribera Sacra and Catalunya before returning home and continuing the project in Sussex.
This is Not a Negroni is a blend of new PIWI varietals, Cabernet Blanc and Sauvignac, picked at Bee Tree Vineyard in Sussex. Partially destemmed, foot trod and spending 3 weeks on the skins with daily wet-capping. The resulting juice was then aged in old oak on the full lees for 6 months. Only 300 bottles were released!
Cabernet Blanc (a hybrid of Cabernet Sauvignon and Regent and a hybrid grape that hold Riesling and Silvaner in its heritage) and Sauvignac (a hybrid of Sauvignon and Riesling and a disease resistant partner). Both graoes have qualities that express similarities to Sauvignon Blanc and Riesling in the glass.
