Vintage Old Winchester (also known as Old Smales) is a delicious English Gouda from the New Forest.  Given extended ageing the cheese develops a deep nutty sweet and umami flavour with a crystalline texture.  Being made with vegetarian rennet also makes this a versatile cooking cheese and can easily be used as a replacement for Parmesan.  
Lyburn Cheese is part of a mixed use farm specialising in dairy, organic vegetables and pumpkins.  This is a truly family operation with different members of the family (now in their 4th generation of farm ownership) taking on the different roles and responsibilities.
