THE CIDER
A single orchard blend aged in a tawny port cask with half Ashton Bitter and half Ellis Bitter from the Burlands orchard. Fermented to dry, then rested on the lees in cask for 8 months. Before bottling a small portion of the Burlands orchard blend was added to bring some softness to the body. After two years in bottle this bold, tannic cider is coming into its own and showing its class. Drink at 12-15oc with red meat, game, wild mushrooms and offal.
THE PEOPLE
Sam and Beccy of Wilding Cider grow organic vegetables and make cider near Chew Magna in Somerset. All fruit comes from unsprayed and unfertilised traditional orchards. Naturally, only wild yeasts are used, with no filtering and no additives whatsoever.
THE PLACE
Based just south of Bristol Beccy and Sam work with several old orchards across this traditional growing cider region - some of these being part of the Long Ashton research centre.
