THE CIDER

When Beccy and Sam too on their own Home Orchard in 2018 it was very heavily skewed towards bittersweets with almost no sharps or bittersharps. In order to rebalance it to better suit natural cider making they embarked on a process of top working (grafting) to change Bulmer's Norman and some Bisquet trees over to bittersharps and sharps. The second iteration of this cider was fermented to dry to give a fruity and light but complex sparkling cider, leaning quite heavily on the sharps and bittersharps Varieties like Foxwhelp, Major, Kingston Black, Tom Putt, Court de Wyck, Dabinett, Yarlington Mill.  Serve lightly chilled as an aperitif, this is also great with oysters or fish and chips,

 

THE PEOPLE

Sam and Beccy of Wilding Cider grow organic vegetables and make cider near Chew Magna in Somerset. All fruit comes from unsprayed and unfertilised traditional orchards. Naturally, only wild yeasts are used, with no filtering and no additives whatsoever.

 

THE PLACE

Based just south of Bristol Beccy and Sam work with several old orchards across this traditional growing cider region - some of these being part of the Long Ashton research centre.
