THE WINE

This wine is a biodynamic blend of 80% Zweigelt and 20% Merlot from the Haidthal and Sonnberg vineyards, planted on loess and limestone soils. Grapes are hand-harvested and carefully sorted. The Zweigelt is destemmed and undergoes four days of spontaneous fermentation, yielding vibrant color and fine tannins, while the Merlot is partially whole-bunch fermented for five days, adding lift, floral notes, and a touch of spice. The wine is aged for 16 months in a mix of large oak barrels and stainless steel, balancing freshness with subtle depth. Unfined, unfiltered, and naturally expressive.

 

THE PEOPLE

For over 30 years, the Zillinger family’s biodynamic vineyard in Velm-Götzendorf has exemplified what it truly means to farm naturally. First established by Hans Zillinger and now led by his son Johannes, the estate is deeply rooted in biodynamic principles, from crafting homemade compost to cultivating their own herbs. Every decision is guided by a commitment of acting in harmony with nature.

 

Johannes embraces minimal intervention in both the vineyard and cellar, believing that healthy soil nurtures healthy vines, which in turn produce exceptional wines. As he puts it, "If you let the good things simply take their course in the cellar, the results are far more exciting." Zillinger’s wines are a testament to this philosophy, capturing the pure essence of nature in every bottle.

 

THE PLACE

The Weinviertel in northeastern Austria is renowned for its Grüner Veltliner, particularly the Weinviertel DAC, Austria’s first DAC wine, known for its signature peppery spice, bright acidity, and fresh citrus and orchard fruit flavors. Grüner Veltliner dominates the region, though growers also produce richer Weinviertel DAC Reserve wines, along with smaller amounts of Riesling, Pinot Blanc, and light, fruit-forward reds like Zweigelt. The area’s loess and clay soils, combined with a continental climate, create clean, expressive wines that offer great value and pair effortlessly with both Austrian classics and spicier international dishes.

    In the unlikely event that your product is damaged on arrival or if the wrong product has been delivered to you, please contact us and we will arrange for collection and exchange or reimbursement. We will reimburse you within 14 days from the date you notify us, once the items have been collected, returned to us and inspected.

    Unfortunately from time to time wines or ciders may arrive out of condition, usually due to defective closures or any number of possible naturally occurring faults. If you find a bottle where you believe this is the case please contact us immediately.

    You may wish to cancel your order for whatever reason after it arrives. In which case you may do so within 7 working days from receiving the order, provided the bottles are unopened, intact and in their original packaging (which must still be in its original condition). Once the goods are collected and inspected, we will reimburse you for the cost of the product minus a surcharge for collection. If you fail to make the goods available for collection within 14 days of cancellation, you will be deemed to have accepted the goods.
